Many times packaged muffins can seem healthy or are labeled as a healthier option, but in reality they are filled with sugar which isn't the best to start your day with. I have came up with a gluten free and natural mini muffin recipe for everyone to enjoy! A clean breakfast or dessert with only 7 ingredients. Never judge by their plain look, because they taste amazing! If you love banana bread, you can put the batter into a bread pan and create a delicious banana bread as well! Recipe is below!
Recipe (makes 8 muffins)
-2 Bananas
-2 Eggs
-1 teaspoon Vanilla Extract
-1 teaspoon Baking Powder
-1 teaspoon Baking Soda
-1 teaspoon Cinnamon
-Cooking Spray
(Feel free to add in extras like chocolate chips or blueberries)
Step One: Combine all ingredients in a blender and blend until combined
Step Two: Place cupcake liners in a muffin/cupcake tin
Step Three: Spray muffin/cupcake tin with cooking spray
Step Four: Fill muffin batter 3/4 or to the top of each liner (I filled mine about half, which is why they are so tiny, so I recommend filling more)
Step Five: Bake in oven at 325 degrees for 25-30 minuets
